Lowfat Mint Chocolate Truffles

By Carroll Pellegrinelli, About.com

Yummy! It's chocolate decadence at its best and it's low fat too!

Prep Time: 1 hours, 00 minutes

Ingredients:

  • 1/3 cup semisweet mint-chocolate morsels
  • 4 ounce lowfat/nonfat cream cheese
  • 1-16 ounce package powdered sugar, sifted
  • 1/4 cup unsweetened cocoa
  • 1/4 cup additional powdered sugar
  • Additional mint chocolate chips to decorate

Preparation:

Place 1/3 cup morsels in a medium glass bowl and microwave at high 1 minute or until morsels are almost melted, stirring until smooth. Let cool. Add the softened cream cheese to melted morsels, beat at medium speed of mixer until smooth. Add powdered sugar and beat until well blended. Press mixture into a 6 inch square on heavy duty plastic wrap, cover and chill at least one hour.

Cut mixture into 48 squares. Roll each square into a ball and place on wax paper. Roll half in unsweetened cocoa and half in powdered sugar. Melt 2T mint chips and drizzle each ball. Serve at room temperature.

Can be frozen for up to a month. Let stand at room temperature for at least an hour.
